
Hardy, substantial vegetables are a welcome addition to menus during cold winter months when customers look for comfort and warmth. Root vegetables including swede, carrots, turnips and celeriac are the perfect ingredient in traditional winter dishes such as stews, casseroles, pies and roasts. Curly kale, savoy cabbage and Brussels sprouts bravely battle the winter weather to provide a welcome burst of nutritious green. It is hard to resist the lure of a luxurious cauliflower cheese or creamy leek bake when the weather is miserable.
Throughout the winter, our growers are dedicated to nurturing their produce and providing protection from extremes of weather. Winter varieties of cauliflower planted by our growers have leaves that cleverly twist around the delicate curd. Parsnips and carrots are often treated to a protective blanket of straw insulating them from frosts above ground. For certain crops, frost can actually be a blessing during the winter months helping them to become sweeter and more flavoursome.
