Long warm days full of sunshine herald the start of the summer season and a wealth of British produce. Fields of salad lettuce are a sight to behold with their array of colours and textures from lime green lollo rosso to rich scarlet oakleaf. The star of the season is the quintessential British strawberry; loved by all and wonderfully simply to serve - just add a generous dollop of clotted cream. The gentle hum of content bumblebees can be heard in strawberry fields; growers often introduce them to encourage natural pollination of the plants. 

Customers look for lighter dishes during hot weather and sumptuous salads are a key feature of summer menus. Lighter, fresher options on the menu require less preparation and cooking time in the kitchen. Grilled courgettes, stir-fried broccoli and steamed new potatoes are full of fantastic flavour and quick to prepare.
